Abomination Stew

Actually, this starts out more like a soup and becomes rather porridge-like the next day (thanks to the barley and potato). But it's got both bacon and scallops (which are unclean according to Kosher law), so it's an Abomination (tm).

You can probably do this without the pressure cooker, but it will take a lot longer... Full recipe after the break.

Pumpkin Pie Filling

So there are lots of recipes for pumpkin pie filling out there, some with milk and egg and some missing one of those. Here's my favorite general-purpose pie filling (makes 1.5c, multiply the ingredients for more):

  • 1c pumpkin puree (I make according to these instructions using a steamer rig).
  • 1/4c refined cane sugar (though I suppose dark brown or even a small amount of molasses would be wonderful, too)
  • 1 egg
  • Pumpkin pie spice (or 2:1:1 cinnamon:nutmeg:ground cloves) to taste

Whisk to combine. You can also add up to 1/3c sweetened condensed milk for extra creaminess (though it makes the filling too thin to be used for some applications--like empanadas). Fresh pumpkin puree makes all the difference!

Charoset

Charoset is a Passover thing for those Jewish types, but it's tasty and good for all:

Ingredients

  • 1 c chopped apple
  • 1 c chopped nuts (walnuts, hazelnuts, etc)
  • 1 tsp cinnamon
  • 1 tbsp sweet red wine (Manischewitz or similar)

Combine and refrigerate.

Salad Sans (Obvious) Leaves

My wife hates leafy vegetables. As a result, she doesn't really eat too many salads. But she likes this one:

Mooshkies!

It all started with a challenge on IRC. Could a not-thoroughly-gross cookie be made with mushrooms in it? Taking an existing oatmeal cookie recipe as a base and assuming that sweet must be replaced with savory, I was able to concoct a reasonably edible thing that resembles a cookie and has mushrooms in it:

Fun with Barley

Most people's barley intake in the US is in beer form (barley is a main ingredient in beer). Taken on its own, however, it's got more character than rice and isn't as hard to stomach as oats can be. And barley is really good for you (except perhaps in beer form).
