Salad Sans (Obvious) Leaves

My wife hates leafy vegetables. As a result, she doesn't really eat too many salads. But she likes this one:

Ingredients
- One 16oz package frozen chopped broccoli, rinsed in a colander to thaw--pick out icky bits.
- One large cucumber, peeled and diced
- 1/2 c torn parsley
- (Opt) 1 apple, diced--Fujis work well for this
- (Opt) 1 red bell pepper, diced (mostly for color contrast)
Toss and combine with a vinaigrette, fruity dressing, or Japanese-style sesame-miso dressing. Parsley is ridiculously good for you, and balances the cucumber texture nicely. The broccoli adds lots of calcium (which you can augment further with a bit of shredded hard cheese like Parmesan).
